This recipe is easy, cheap and nutritious! They are ingredients I wouldn’t normal use, but they are really delicious and great for you. Fennel is cleansing for the liver and both fennel and pear are high in potassium, which is great for energy. Plus it’s getting cold and soup is great comfort food without being high in saturated fats or complex carbohydrates.
2 garlic cloves
pint of vegetable stock
1. Fry the onions and garlic until soft
2. Add the fennel, pear and stock.
3. Bring to the boil and simmer for 40 mins.
4. Blend and drizzle with olive oil to serve
